Cultivar: itrana olives
Geographical source: Itri/Gaeta, Lazio
These small, purplish-brown, olives from Lazio are left to ripen on trees long after other varieties have been harvested. They have a soft, tender flesh and a tart, citrusy taste. Gaetas are highly coveted by Italian chefs and used in many dishes. They are also delicious just served out of bowl for snacking.
